Introducing: Mediterranean Chickpea Salad Wraps


A perfect balance of crunch, creaminess, and savory goodness — all wrapped up in a portable, easy-to-love package.

 


 

Ingredients:

  • 1 cup chickpeas, mashed slightly with a fork

  • 1/4 cup diced cucumber

  • 1/4 cup diced red bell pepper

  • 2 tbsp red onion, finely chopped

  • 2 tbsp Kalamata olives, sliced

  • 2 tbsp crumbled feta cheese (optional)

  • 2 tbsp hummus

  • 1 tbsp olive oil

  • Juice of 1/2 lemon

  • Romaine leaves or large collard greens (for wraps)


Instructions:

  1. In a medium bowl, combine mashed chickpeas, cucumber, bell pepper, onion, olives, feta (if using), hummus, olive oil, and lemon juice.

  2. Stir gently to mix well.

  3. Scoop the mixture onto romaine or collard leaves.

  4. Roll up like a wrap and enjoy!


Tips:
